Product Options - Discontinued Products
Within our products we have some options (size/colour) that are discontinued, we don't want to disable the status of the product as this affects our reporting, but I do want to make sure this option in this product doesn't sync to our website.
My question/suggestion is, can we have a new option under a product options status to "turn off" so it still reports on

We have a similar situation. We manage this with Product Sub Type and custom fields that we add to the Product Search menu so we can filter and bulk update, and our reporting.
Sku Classification > Product Sub Type - Core, New, Fashion, Early Clearance, Clearance, Discontinuted
Custom field for Future Range Status - Current or Discontinued
Custom field for Style status (Shape Status - many colours are in a style) - Core, New, Discontinuted
Unfortunatly you can't use Cin7 rpeorts with these custom fields, but you can include Product Sub-Type.
We export a few Cin7 Std reports (Open PO, Receipted PO, Open SO, Sales) to Excel and xlookup from a data table where we paste the Cin7 data (formulas auto-copy down & summary or exception pivots auto select the additional data)

Good ideas from Kate above - but also if this is set as an option product (not via the size grids) then you can split the product (via Actions), make the one you no longer sell internal/secure and remove the checkbox for the channel, then merge the remaining ones back together (via Actions again) which means they'll still be in reports but no longer available for sale or connected to a channel.
Notes: remember to update the Style Code on the internal/secure product so it's unique from the current products. Also, if you're selling on e-commerce such as Shopify you'll need to unmap/remap (download) the remaining codes to ensure connection works to Shopify.
